Week #20

Wow! Summer is here!

The craziness begins! I tend to love summer for the first month and then come July I am ready for school to start. The summer brings so much fun and family time. I hope that all of you have fun things planned for you and your families over the next 2 months. The possibilities for exercise are endless!

Alright you asked for it and I begged so starting June 9th there will be a Wednesday night Zumba at 8:30pm at Desert Palms. That's right you can get your Zumba fix all three nights now! We instructors are excited to bring you tons of fun 3 hot nights every week in the summer! Bring your friends and family! They don't need to have a membership. We have options for out of town-ers and those of you that just love to Zumba only.
Each class is $5 (if you are not a member) or 10 time punch pass is $42.50 (that makes it $4.25 per class) the cheapest by far in town!

DVD Volume 3 is in the making starting tomorrow. It will take us about a month to get the final copies so we will keep you posted when they will be finished and ready to sell!

Week #20 Challenge - Yummy Summer Recipes!

One of our biggest challenges is finding good healthy recipes to make for our family that taste good and are low in calories. I have come across a lot of them and have tried them all so I will send out a new recipe every once in awhile for you to try in your homes. I am sending out a yummy Salad recipe that is really good, Spinach Salad with Shrimp. Now if you don't like shrimp then you can always add chicken. You may have been to Applebee's and purchased this Salad to eat but let me tell you how many calories are in this salad from Applebee's, 1,071 calories! What, a salad! Yes, you need to be really careful when you order salads. Most everyone orders a salad thinking that they are being really healthy but most likely you are not. There are so many hidden calories everywhere that you have no idea about. Caesar Salad can have up to 1700 calories in it. Not so good when your calorie intake is around 1500 for the whole day! Beware of what you are eating and try not to eat out very often, it may be scary!! Now, this salad I think tastes better and the calories are really low, because you know what is going into the salad. Try it out over the next week and also take sometime to look through cookbooks for some new recipes. If it does not list the calories then stay far away from it. A good cookbook will always tell you the calories per serving!

Shrimp Spinach Salad Serves 4 - calories per serving 220

6 strips of bacon, cut into small pieces or I used fresh bacon bits

1/2 red onion, sliced

1 cup sliced mushrooms

8 oz shrimp or use chicken if you don't like seafood

2 tbsp pine nuts

1 tbsp Dijon mustard

3 tbsp red wine vinegar

Olive oil

1 6oz bag of fresh spinach

2 hard boiled eggs, sliced

1. heat a large skillet pan over medium heat. Cook bacon until crispy, 5 to 7 minutes. Use a slotted spoon to transfer to a paper towel on plate and reserve

2. Add onion and mushrooms to the pan and cook until the onions begin to brown. Season shrimp with salt and pepper and add to pan, along with the pine nuts. Cook until shrimp are pink and firm, no more than 4 mins. Stir the mustard and vinegar into the pan; season with salt and pepper. If the pan looks dry, add a splash of olive oil.

3. Divide the spinach and eggs up on four plates and top with the hot shrimp mixture and some of the liquid in the pan. Sprinkle with bacon bits.
